On the nose tangy fruits and spices, very typical of the Poulsard grape variety. Ruby red with cherries and wild redcurrant notes, then scrubbed herbs and spiced bitters. Beautiful balance in the mouth with freshness and a rounded finish. Makes an excellent aperitif. Pairs well with cold meats, salads, and BBQs.
Three weeks vatting. Total destemming. Indigenous yeasts. Light pumping to extract color and tannins. Malolactic fermentation.
