NERD NOTES
Grapes are sourced from five different sites - Eastern Peak, Griffins Road, Two Mile Hill, Pirrepoint, and Moonambel.
Fruit from each site are harvested separately and individually pressed in whole bunches, fermented with indigenous yeasts in a range of oak casks (ranging from 228L to 600L, with 30% being new oak).
Wines are racked after 12 months aging, before being aged for a further 6 months in tanks. Complete malolactic fermentation, with no fining or filtering.
Minimal sulphur added pre-bottling.
