A quite rare non-sparkling wine from Champagne, a region obviously know for its bubbly wines.

The base wine here is from Stephanes Dorien Cuvee (our favourite). An amazingly taut and complex white wine. A crisp backbone of acid yet with layers of flavour. Notes of chalk, citrus, peach and brioche. Very minerally developing a bit of honey over time. Delicious.

Chablis lovers take note!

Region: Cote des Blancs / Champagne (Coteaux Champenois)

Grapes: Chardonnay

From the Hautes-Mottes vineyard, with terroir that lies on the far side of the railway in the plain south of Le Mesnil. 'Hautes-Mottes' means 'high mound' and refers to the unusual veins of chalk that extend into the plain. It was planted in the 1950s and the 1980s and is .95 hectares with a southern exposition. Hand harvested.

Stéphane is an inspired young winemaker who worked as a sommelier in London and Paris and as an aerospace engineer before taking over the family vineyards in Oger and Le Mesnil. Certified organic, he follows biodynamic practices on the vineyards and his range uses only grapes grown by him. Stéphane is a passionate jazz saxophone player and names his cuvées after jazz modes that the wines remind him of, musical scales that date back to Ancient Greece.
