A deliciously fresh, darkly seriously yet approachable Victorian red, made from Schioppettino grapes - traditionally grown along the Italian-Slovenian border
Intensely perfumed, with dark berries, violets & alpine florals, pepper, and subtle oak. It builds on the palate, with ripe blackberry and blackcurrant flavour, white pepper, savoury oak spices, and a fine edge of alpine herbs. Dry and medium bodied, with striking acidity and chewy tannins, making for a vibrant texture that's full of depth.
Its fresh and lively yet complex and seriously delicious - its no wonder that its been used by people for centuries to make promises to each other. . .

NERD NOTES
Viticulture
Grapes were grown and purchased from the Chalmers Heathcote Vineyard - site has an east facing slope, red Cambrian soils, with deep red clay-loam soils on the lower end, and a mix or rocky terrains on the higher end.
Vineyard is farmed with organic principles where possible, and is transparent when not possible.
Winemaking
Grapes were harvested on the 6th March.
25% whole bunch, placed at the bottom of the fermenters, rest was gently destemmed above. Fermented to completion with wild yeast, cap rolled under the juice by hand once a day for 17 days.
Pressed into old neutral French oak barrels.
Added sulphur, no fining or filtration.
