Tasting Notes

Ancestral sparkling Chardonnay from the Adelaide Hills.

Light toasted brioche and lemons on the nose. Lemonade, rich foam, super fine and creamy bubbles, with a chalky lemon sorbet-esque finish. Delicious.
Nerd Notes

Chardonnay from Kars Vineyard in Mylor in the Adelaide Hills, South Australia. The site is a cool climate with a gentle north-facing slope.

Hand harvested grapes, direst pressed, and settled overnight before being racked to tank for fermentation, and bottled with about 20g/L residual sugar to finish.

Spent 65 month on lees, hand riddled and disgorged in August 2026 (with no dosage).
