ABOUT THE PRODUCER
In 1980 Giambattista Cilia, Giusto Occhipinti and Cirino Strano founded Azienda Agricola COS, making the trio the youngest wine producers in Italy. 50+ years later, their practice principles remain steadfast; maintaining balance with nature through biodynamic farming, and finding the best ways to truly express the character of the grapes and unique Vittoria terroir. They have always used neutral vessels that left no traces on the wines, and 2007 saw the expulsion of anything other than large format clay amphora for vinification.
The three have brought life back into the region of Cerasuolo di Vittoria through their winemaking. In 2005, they made the first Denominazione d’Origine Controllata e Garantita (D.O.C.G.) designated wine, which is the only DOCG in Sicily. You may see any one of the trio's names on other beautiful wines, yet COS remains a revered name across the globe, particularly in the natural wine world.
WINEMAKERS NOTES
"White peach, lime, and Jasmine on the nose. The palate is medium-bodied with very fine tannins. Honey, orchard fruit, pomelo peel all emerge on a very long finish. Very subtle skin contact for 10 days before the wine was aged in large barrel."
