A fruity and complex Savagnin from Arbois-Pupillin in the Jura.
Flinty and smoky on the nose, with a hint of tangerine peel. The palate holds vibrant flowers, bright citrus, stone fruits and green apple with herbal notes and a slightly salty finish. Deep in flavour and concentration. Pairs well with seafood risotto, smoked foods and aged cheeses. Super good now but will only improve with age.
Julien Mareschal's 5 hectare vineyard sits high on the steep marl slopes of Pupillin, with some vines reaching 550m above sea level. His winemaking is biodynamic in practice, with hand-harvesting, native yeasts and minimal sulphur (avoiding any additions where he can). This Savagnin was grown on a combination of deep gray and blue marls at an altitude of 400m. Manual harvest, 50% partial destemming. Fermentation in foudre with 20 months aging on lees.
