Tasting Notes

Dark fruit flavours of black cherry and plums, with mint and eucalyptus tones, and soft tobacco hints that emerge on a lingering finish.

Smooth on the palate, textured between silky fruit weight and dry dusty tannins, medium bodied with some richness.

Nerd Notes

Cabernet Sauvignon from Coliban Glen Vineyard, Kimbolton in Heathcote.
The vineyard is an eastern facing site located on the western banks of Lake Eppalock, with vines growing in loamy soils.

Hand picked grapes, with whole bunched cold soaked for a few days before being destemmed into a small, stainless steel open fermenter.
Fermented for close to 5 weeks, with daily punch downs for the first 10 days, with the cap completely sinking after fermentation had completed.
Softly pressed into mature French oak barriques (3 to 5 years old), aged for 18 months, and underwent malolactic fermentation.

Bottled with minimal added sulphur.
