Enoliti Botanici 'Santa Ildegarda' Aromatised Wine | Sicily, Italy

An wine based botanical infusion. Essentially a modern version of the ancient “medicinal wines” or tinctures. Created by a winemaker and herbalist with no added sugars, sulphites or fortification.

A base of Nero d'Avola with cold macerated rhubarb root, Cinchona (quinine) bark, star anise, boldo leaves, sweet orange peel, walnut leaves, and vanilla pod.

Dry, vinous amaro with firm rhubarb and quinine bitterness, lifted by orange peel and star anise. Herbal depth from boldo and walnut leaves, with a faint vanilla softness on a long, bitter-spice finish.

(We have classified this as a Spirit for simplicity sake, but it is an aromatised wine - made like an amaro or vermouth, but with an unfortified wine instead of a distilled spirit - best drunk within a week of opening.)
