The vineyard is a gently sloped south-west facing site with a cool climate, with vines growing in white clay and lime soils.
Hand harvested grapes, picked at phenolic ripeness, and softly destemmed before vinifinication.
Spontaneously fermented with indigenous yeasts in stainless steel and concrete, with whole berry gentle punch-downs during the first 10 to 15 days of fermentation.
The wine is transferred to wooden barrels near the end of fermentation, where it matures on fine lees for a minimum of one year.
