Pinot Noir from the Hautes Cotes de Nuits in Burgundy, France.
The vines come from a 0.5 hectare site sitting at 380 metres above sea level, with 20 year old vines growing in clay and limestone (and with very little soil).
The grapes are harvested by hand, sorted, and then destemmed (between 50% to 100% depending on the vintage).
Vinified through spontaneous fermentation with natural yeasts, cold macerated for 10 days, and frequent pump overs and punch downs.
The wine is then aged for 15 months in French oak barrels, with 20% new oak.
Bottled unfined, unfiltered, and minimal added sulphur.
