Light to medium bodied with fine lees-driven texture. Very balanced with soft phenolics and acid. Subtle flavours of citrus, cumin, spice and dried herbs. Finishes long and saline.
A restrained and complex wine with savoury fruits and soft saline acidity. Fresh yet subtle. Really good.

100% Palomino Fino from Miraflores Baja, Sanlúcar de Barrameda. Whole-bunch pressed, spontaneously fermented and matured for 11 months on full lees in ceramic-lined steel tanks. Unfiltered, without flor ageing. Biodynamically farmed vineyard.
