Dark and rich with very dry and chalky tannins. Earthy and spiced with ripe berries, rhubarb compote and wild herbs. Developing lots of complexity with almost ten years age.
Serious wine. Soaks up food amazingly well. Meat, cheese and pheasant apparently (fancy chicken).
Wild ferment in old cement tank, aged in the same tanks for only a year (not long by Tuscan standards) and rested in bottle for another year. No fining, filtration or added sulfites.
