Complex and layered Pinot Noir from the Mornington Peninsula.

Red cherry, berries, redcurrant, and boysenberry fruits, with alpine aromatics, and a fresh rain-like minerality, supported by pomegranate, blood orange, dried berry fruits, poached rhubarb, and subtle oak spices.

Finely textured and lithe on the palate, light bodied and dry, structured around a silky well-integrated tannins and a line of mineral acidity.

Pinot Noir from Polperro's Mill Hill vineyard in Mornington Peninsula, Victoria.

The vineyard sites at 270m elevation on the Red Hill - one of the highest spots in the entire region - with a north facing slope.
The vineyard is managed with organic viticulture with biodynamic and regenerative practices.

Grapes are handpicked and destemmed, starting fermentation as whole berries in two ton open fermenters, before undergoing a strong fermentation with hand plunging 2-3 times a day for 15 days.

The wine is macerated on skins for an additional 15 days post fermentation, before being pressed and racked to barrel (30% new oak), before being racked and returned to barrel in spring, for a total of 16 months maturing in barrel.

Bottled unfined, unfiltered, and with minimal added sulphur.
