Medium bodied with savoury notes of chamomile, citrus, orchard fruits and savoury spiced almond notes from the flor aging. Fresh and saline on the palate with a real savoury complexity. Really good.

100% Palomino Fino (clone 84) from century-old vines on albariza soils in Miraflores Alto, Sanlúcar. Whole-bunch foot-trodden, seven days of skin maceration and spontaneous fermentation. Eight months under flor in used Manzanilla oak and Amontillado chestnut casks. Unfortified.
