For our Fallen Quince vermouth we begin with beautiful organic pineapple quinces grown by local farmer friends. Several infusions of quince alongside saffron, bay leaf and blood orange are blended with our Moscato base wine. It is then bittered using two species of wormwood and then left to age resting on quinces that have been slowly burnt over a wood fire.
