40% Savagnin - Tatachilla Road Vineyard - Tatachilla, McLaren Vale. ACO Certified Organic.

Savagnin was picked nice and physiologically ripe, the acid is balanced yet persistent. This component was barrel fermented and aged on full lees for 18months.

Pinot Gris also ripe for the cool Pooks Vineyard site. Whole bunch direct pressed and fermented in stainless steel tank. Racked to old french puncheons and aged on fine lees for 18 months.

Bottled unfined, unfiltered, with no added sulphur.
