Super interesting rice wine made using Vietnamese purple rice!

A little sweet on the palate with a sift texture and light, chewy tannin. Flavoursome with notes of fig jam and raisins. The most fancy and delicious of the Rice wines from Song Cai. Super interesting.
Nerd Notes

Made from the first drippings of 7kg fermenting purple sticky rice per bottle.

Initially 600g of residual sugar per litre, fermented over 12 months in an uncontrolled cellar that slightly madeirises the wine in the Hanoi Summer heat.
