Tasting Notes

High altitude Cabernet Sauvignon that is full of freshness and purity.

Raspberry, red cherry, and plum fruit flavours, violet florals, a core of earthy minerality supported by dusty spices and a touch of herbaceous-ness.

Bright on the palate, medium to full bodied, dry, smooth with a crunchy fruit texture, a juicy tannic mouthfeel, and a refreshing acid line.
Nerd Notes

Cabernet Sauvignon from Mei-Li-Shei village in Shangri-La, at 2300m elevation, in Yunnan, China. Vines grow in sandy-loam with gravel soils.

Hand harvested and destemmed over a 5 day period, fermented with a 14-16 day cold maceration, with no post-ferment maceration.

Aged for 8 months in stainless steel tank and 225L neutral French oak barrels.

Bottled unfined, with minimal added sulphur.
