This is where the white wine rulebook goes to die—on purpose. Think Jura savagnin left under veil, skin-contact friulanos, fun and fresh new wave oranges, Georgian qvevri bombs, sherry cousins, and unicorns like Macvin or Vin Jaune.

These wines are structured, sometimes nutty, often cloudy, and always a bit untamed. Some taste like broken apples and salt-spray. Others like apricot skins in a honey-pot. This is the category where you’ll either fall in love or think about it for weeks.

Either way, they’re unforgettable.
