Rich and juicy, with aromas of green apple and caramel, with hints of chocolate vanilla, and mushroom. The palate builds with textured notes of plum, dried apricots, date, and butterscotch emerging, before returning to green apple with cinnamon and green herbs on the finish.

NERD NOTES

  • Produced by the Camut Family - seventh generation calvados producers, operating since the 1800s.
  • Distilled from apples grown at Domaine de Semainville, in the Pays d'Auge region of Normandy, France.
  • Orchards are planted in the hautes-tiges style - where apple trees, other trees & vegetation, and Norman cows can coexist in a given orchard-meadow - with many varieties of heritage apples grown in the orchard.
  • Cider is produced from the apples and aged for 10-11 months in barrels.
  • Twice distilled in two woof fueled copper pot stills.
  • Reduced with rainwater and aged for a minimum of 6 years in oak.
  • Frequently transferred between barrels for the first two years to promote oxidation.
  • From the third year, it is transferred to foudres, filled between 66% to 75% to ensure a consistent level of oxidation.
  • Only use old oak barrels, mainly made of Limousin oak with an average age of 50 years.
