"Forget what you think you know, you know nothing" - Borachio

Tasting Notes

A curious Carbonic wine from the Adelaide Hills.

Interesting wine. Not skin contact but it is skin contact? What's going on here.

Notes of marmalade toast, charred pineapple, stone fruit, and pithy citrus oil.
Soft and cool, gentle grip and quench on the finish.

From Borachio - "We’ve had this with SPICY AF food during vintage and it kept pace. Feels like day 3, or even 5, is the window for this one, but live your life. Don’t serve too cold. Your standard gross-red-wine temp works best and a firm decant doesn’t hurt either."

Nerd Notes

Chardonnay from Lansdowne Vineyard in Forreston - Adelaide Hills, South Australia.

The whole bunches were in a sealed tank for 2 weeks before pressing and elevage in old barrels.

After this, the fruit was pressed and rested in 10+ y/o 500L barrels. White carbonic is a curious thing. Rather than the juicy candy flavours of red grapes, it seems to accentuate woody herbs and Hubba Bubba. Forget what you think you know, you know nothing.
