Tasting Notes
• Ripe plum, cocoa, and cherry compote
• Dried herbs, black tea, baking spice
• Smooth and warming, without the sticky heaviness
Winemaking Notes
• 100% Cinsault grown on marl and pebbled soils at 110m elevation
• Estate-grown and organically farmed
• Minimal extraction: short maceration under grape marc
• Fortified with spirit and bottled with minimal sulphur
• No filtration, no fining
Drinking Notes
Serve slightly chilled or cellar temp. Made for chocolate, dried fruit, salty cheese, or surprise nightcaps. A fortified red for people who usually say “I don’t like fortified reds.”
