An elegant and fresh style of Chablis. Expressive aromas of jasmine, pepper and nectarine. Beautifully structured wine with a great line of acidity running through everything. A wine of excellent potential but very enjoyable now with some air.
NERD NOTES
They always had the vineyard however only bottled under their own Domaine in 2017. 0.9 hectares. Far more white clay than the other plots between the 1er Cru hills of Vaillon and Le Foret as Eleni describes to me “In between La Foret and Vaillon. Kimmeridgian with lots of of white clay.
Hard to work *she laughed*” North West facing. Style - good mix, very mineral. 40 years old vines. Wild Fermented in steel then Elevage in barrel for 12 months of 6 to 30 year old barriques.
THE PRODUCER
Edouard and Eleni have Chablis running through their veins with Edouard's family owning a large estate in the north of the region. Meanwhile Eleni had been working for some time for Vincent Dauvissat (who helped them get started). The young couple wanted to start their own estate so in 2013 they purchased 5 ha from their father and grandfather.
Wine making is consistent across all wines. Wines are wild fermented in tank then elevage takes place in seasoned barrels for 12 months.
“I trained with Daniel Barraud in the Maconnais and fell in love with how he made wine. Most Chablis is only made in steel tanks, but that’s not what we are looking for.
