Chablis that perfectly balances restraint and nuanced definition.

Opens up with aromatics of lime and citrus blossom, river stone minerality, chamomile, and a light herbal character. Gives way to flavours of preserved lemon, fresh citrus fruits, silver needle tea, and a stony-saline mineral core.

Softly textured on the palate, medium bodied and dry, with a gentle almost-powdery mouthfeel balanced by a bright current of mineral acidity and saline core.

Nerd Notes

Georges Deschamps is run by Guillaume Vrignaud, the great-grandson of the estate's titular founder. Dedicated to organic viticulture practices, Vrignaud uses them throughout the estate and champions their use across the appellation.

The fruit for this cuvee comes from the Côtes de Fontenay lieu-dit, harvested from Chardonnay vines planted in 1975 and growing in Kimmeridgian limestone, clay and marl soils.

Grapes are gentled harvested, pressed as whole bunches, and then undergo a long fermentation with natural yeasts, and extended aging on lees.

Bottled with minimal added sulphur.
