Hopeless Thoughtful 'Rising Foam' Merlot 2023 | Manildra, NSW

A super light chilled Merlot from Manildra, by way of Hamish's garage in the 'Gong.

Red fruited in flavour, tart red berries, mulberry jam, and cranberry juice, all underpinned by an olive brine character.

Pristinely light on the palate, dry, structured between bright acidity and a touch of tannic grip. Best drunk chilled.

NERD NOTES

"Biodynamic Merlot grown on Ikigai Farm in Manildra. It rained quite heavily the day before the grapes were picked, resulting in some waterlogged bunches and some wild pH readings.

But nonetheless, whole bunches were thrown into a sealed tank to induce some carbonic fermentation. After two weeks on skins, the grapes were pressed off into neutral oak and left to rest for an ambiguous two and a half years before being bottled without the addition of sulphur."
