A 50/50 blend of Malagousia and Assyrtiko from Thessaloniki in Northern Greece.
Golden in sight and scent, with aromas of peach and stone fruits, eucalyptus, and botanical herbs. Dry and light bodied, smooth on the texture with light, almost grippy, energetic acidity. Flavours of ripe peach, grapefruit and orange, textural stone fruit, chamomile and lavender, dried herbs, and a creamy saline character, that gives way to long salty-herbal finish.

NERD NOTES
Each variety is harvested and destemmed and kept separate throughout the fermentation process.
The grape juices are macerated on skins for 1 or 2 days at low temperatures. They are then fermented with indigenous yeasts, taking place in stainless steel tanks at a consistent 18 to 21 degrees Celsisus temperature, with spontaneous malolactic fermentation.
The resultant wines are blended together, racked, and stirred on fine lees for three months in old oak Barriques (225 litres each).
The wines undergo tartaric stabilisation. No fining, filtration, or added sulphites.
