Nerd Notes:
Made from Moscato grape pomace which is fermented and then distilled using the last direct-fire copper alembic still that remains in operation, all according to the recipe perfected by Romano Levi.
After the pomace has been used, it is converted into still's fuel used the following the next season by being sun dried and formed into bricks.
The grappa is aged for 6 months in 225 litre wooden barriques.
