The handling was very light and this wine was co-fermented.
The fruit was lighgtly foot stomped and left to coldsoak for only 3 days before pressing off to 1 x stainless tank and 2 x small Amphora’s where slow, cool ferments ensued.
The wines spent 9 months on full solids in their respective vessels after which they were racked into one stainless tank before bottling.
