Grapes: Cabernet Sauvignon and Merlot

Rich dark fruit aromas, with spicy herbal and smoky notes on the nose. Builds in flavour, with intense notes of black cherry, blackberry, and dried fig.

The palate is large and weighty, rugged rocks and earth in texture, with powerful firm tannin and elevated acidity, long savoury finish - akin to aged rock tea.

Nerd Notes:

Organic and biodynamic farming (Demeter certified in 2023 - the first Chinese winery to do so).

75% Cabernet Sauvignon and 25% Merlot

Hand picked grapes, cold maceration, temperature controlled fermentation with indigenous yeasts. Aged in neutral French oak barrels for 12 months. 

Lees racking, minimally filtered in the traditional Bordeaux method and minimal added sulphur before bottling.
