Grown on the eastern slopes of the Helan Mountains, in Ningxia, China. The area is known for its unique terroir, with high altitude sunshine, cool evening breezes, and mineral-rich soils layered with mountain stones and river silt.
Silver Heights uses a combination of biodynamic viticulture and traditional Chinese farming methods, converting to biodynamics in 2017, with a focus on biodiversity and taking maximum care in the vineyard.
Silver Heights was Demeter biodynamic certified in 2023, the first and only Chinese winery to do so.
The grapes for 'The Last Warrior' come from Silver Height's Jishan Vineyard - 40 hectares worth of vines with a south-facing aspect, growing in sandy soils with small stones at 1200m altitude.
The wine is a blend of 75% Cabernet Sauvignon and 25% Merlot (from the youngest vines in the vineyard).
The grapes are hand picked and de-stemmed, before a 5 day cold maceration, and fermented for 7 days in temperature controlled stainless steel. The wine is then aged for 14 months in 225L French oak barrels, 60% neutral and 40% second-use.
Lees racking, minimally filtered in the traditional Bordeaux method and minimal added sulphur before bottling.
