Delicate golden aromatics, with dried herbs, citrus and stone fruit notes.
Generous in flavour with ripe citrus and stone fruit, more dried herbs, a saline aspect, and a touch of minerality.
Fresh on the palate, mineral crisp yet smooth in texture, structured with bright acidity and subtle fruit tannin (from a very short skin contact), fresh and saline on the finish.

NERD NOTES
The estate is based in and around Camporeale (Palermo) in Western Sicily, originally founded by a group of Jesuits in 1642.
Grillo grapes, grown with organic viticulture.
Grapes are hand harvested into small baskets, transported to the winery, where they are de-stemmed and macerated on skins overnight.
The following day sees the grapes pressed, with must (from previous days’ harvests) added to the grape juice, causing the wine to naturally ferment with wild yeasts.
Fermentation lasts for approximately 20 days, after which the wine is matured in stainless steel for 6 months over winter and spring, before bottling.
Bottled with minimal added sulphur.
