Aromatic notes of citrus, stone fruit, and honey.

The fruit builds on the sip, with concentration notes of mandarin, lemon, and apricot, alongside honey, a touch of dried herbs and spices, and a savoury undercurrent.

Clean and delicate on the palate, refreshing with a smooth saline texture, bright acidity, just slightly rounded out with a lush fruit character.

Serve with pesto pasta, shellfish, or chicken katsu.

Nerd Notes:

Organic grown Timorasso, on chalk soils at 270-300 metre altitude.

Hand harvested, spontaneously fermented with native yeasts in stainless steel.

Lightly filtered with minimal added sulphur prior to bottling.
