Japanese sake yeasts are more resistant than traditional wine yeasts, allowing fermentation to occur at much lower temperatures, impacting all aspects of the final wine.
The vineyard lies 10km from the Pacific Ocea in the Leyda Valley. The results in a long, slow growing season, as the ocean provides a fresh cooling wind (from the Humlboldt Current) and morning fogs keeping the vines cool during the summer.
The Leyda Valley is covered in granite soil and slate bedrock, resulting in mineral rich and fresh white wines.
